Nead Inspiration Cookbook: Veggie and Sausage Pizza
June 24, 2015
Yesterday I had 20 minutes to get to the grocery store and prepare a healthy meal for the kids before a client came over. I created this veggie and sausage pizza for the kids and their guests and everyone (including the hubz) enjoyed it.
Please note: It’s not gluten free or dairy free but it was loaded with good nutrition.
Ingredients for Veggie and Sausage Pizza
One pizza crust. I used the Boboli brand.
One tub of Hummus- 8 ounces
A small can of pizza sauce- 8 ounces
Broccoli
Asparagus
Yellow pepper
Mushrooms
Tomato off the vine
Spinach
Mozzarella cheese
Parmesan Cheese
Sausage (I used sweet)
The next day I made the same recipe without the sausage and with FLATOUT brand flatbread. Still yummy!
Directions for Veggie Sausage Pizza
Preheat the oven to 425 or whatever the temperature is for your brand of pizza crust.
I used two pre-made pizza crusts. You can always use the cauliflower crust or make your own to create an even more healthy option, but I was in a hurry!
Spread the hummus on the base of the pizza. I used almost all the hummus in the 8 oz tub between the two pizzas.
Use 1/2 of the pizza sauce between two pizzas. I am minimizing the pizza sauce because it’s highly processed and full of sugar. So it’s really for taste.
Brown the sausage and set aside. You could also use chicken or turkey which are lower in fat, or skip the meat altogether.
Cut up the rest of the veggies and load them on the pizza. There are no rules for this. I used as much of the veggies as I can.
Place the mozzarella on the cheese. I probably used three slices and distributed them between the pizzas. If you are avoiding dairy or have a sensitivity, you can skip it. The veggies are really the star of this pizza!
Spread as much of the meat as you desire. I used it all up for these pizza.
Sprinkle the Parmesean cheese. I also used nutritional yeast for a nuttier flavor.
And you are done! Pop it in the over for 10-15 minutes and your healthy pizza awaits!
