Zucchini Boats swimming in Italian-Asian fusion sauce

These zucchini boats feel rich and nutritious and completely fill you up! The combination of the italian flavors and the tangy sweetness of the asian flavors create a richness and the tiniest pop of heat. The total calories for the entire dish is 1250. Serves 6. 208 calories per serving.
Ingredients
- 4 medium size zucchini
- spray oil
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 3 stalks of celery, chopped
- 1 teaspoon garlic paste
- 1 teaspoon basil paste
- 1 package General Tso Seasoning
- 1 1/2 cup tomato sauce
- 1 tablespoon tomato paste
- 1/2 cup chicken broth
- 1/2 pound turkey
- 1/2 pound italian sausage
- 1-2 cups small small shrimp cooked
Instructions:
Preheat oven to 400 degrees
Prepare zucchini boats
- Cut stem from zucchini
- Slice zucchini lengthwise
- With a spoon, scoop out the flesh of the zucchini, enough to “load it up with yumminess!”
- Lightly chop the zucchini flesh you scooped and set aside for the sauce.
- Spray with zucchini boats with oil
- Place in a lightly greased baking dish.
- Set aside
Prepare the sauce
- Heat oil in a large pan.
- Add onion, saute until translucent.
- Add zucchini “insides,” garlic and basil and cook a minute more.
- Add the turkey, italian sausage and shrimp and cook until meat is almost completely cooked.
- Sprinkle the packet of asian seasoning over the mixture and cook a minute more.
- Add tomato paste and stir until combined
- Season with salt to taste.
- Add tomato sauce and cook for 2 more minutes
- Add chicken broth and simmer for five minutes.
Assemble the boats together for baking.
- Pull out the zucchini boats.
- Fill each boat with the sauce, use all the sauce (pile it up).
- Sprinkle with cheese as you like. You don’t need to use cheese.
- Cover with foil
Bake in a 400 degree oven for 30 minutes.
